Try replacing the oil in a recipe with applesauce, or, if it's something like pancakes, just add applesauce and adjust the liquids as needed.

I made pancakes this morning using bisquick. I replaced 1/2 cup of the bisquick with white whole wheat flour, added one 4 ounce cup of applesauce, and the eggs and milk according to the recipe on the box. After everything was mixed, i folded in 1/2 tsp of pumpkin pie spice.
Three thumbs up for Apple Pie Pancakes, although I think #3's favorite part was that I let her put the butter on her pancake by herself.
Really good! I put some mashed banana in the last half and that was good too though Sam said she doesn't like banana and wouldn't try it.
