I need a new blender.

Happy Fourth of July!  Like many moms, I tried to use the occasion to introduce my kids to such yummy things as blueberries, strawberries, bananas, and kale.

Ok, so the kale was clearly a mistake.

I won't take all the blame.  According to this recipe: Green Smoothie Popsicles, all I had to do was toss a handful of kale into the blender with fruit and yogurt, and it would virtually disappear.  I even tried to go the extra step, and used blueberries as my main fruit, to cover the green color of the kale.

I suspect I need a new blender.  My blueberry-kale popsicle mix came out chewy.  Ew.  I think I deserve a round of applause for choosing NOT to serve the chewy kale smoothie to my kids.  They can thank me later.

Now for the good news.  In order to make the smoothie/popsicle/fail, I had to defrost the blueberries.  They had, of course, frozen into one solid block.  So, after defrosting the entire bag, I thought I should do something with them.

Here's what I came up with:






Blueberry tarts!  I used reduced-fat crescent rolls, placed them in muffin tins, mixed blueberries, sugar, cornstarch and a little squeeze of lemon juice and spooned the mixture into the crust. Then I sprinkled a little sugar and cinnamon on top.   I baked them at 375 degrees for about 8 minutes, and voila!  Tasty, juicy little tarts that both of the littles loved.

Note: Only two thumbs up today because the bigs are away on vacation.

  1. Bummer the smoothie didn't work out. But good recovery with the blueberry tarts! :)
